Description: This Apios americana var. "simon" plant is a fantastic addition to any garden or outdoor living space. This is the best of the improved varieties and is now all that I grow. I lost the genetics when I grew multiple varieties together and when I moved a repurchased this variety and only grow "simon" also known as 1972. This variety will produce a cluster of medium size tubers in a year or if you wait two years the tubers will be much larger. With a life cycle of perennial, this plant is sure to come back year after year with minimal care and can grows from Florida to Canada. It features edible tubers that can be harvested any time of year and taste like a nutty potato. The tubers have three times the protein of a potato so they fill you up. The flowering plant is also fast-growing, making it a great choice for those who want to add some greenery to their yard or garden. The plant will spread and I recommend providing it with a fence or trellis to crawl on. Better yet plant it with jerusalem artichokes (sunchokes) and they will grow together covering up the sunchokes just when they start to look unsightly. In southern climates the plant will flower and has beautiful scented magenta flowers. Apios tubers and flowers have medicinal properties including anti inflammatory, anti cancer and more. This plant is perfect for those who want to add some diversity to their garden and try out a new type of cuisine. This price is for a single medium seed size tuber 1" or larger in diameter or two small seed tubers <1" in diameter. Cooking instructions:Boil tubers whole for 30 minutesSlice thick and pan fry on both sides until golden brown using your favorite oil or fatEnjoy
