Many would be shocked to find out that the Dandelion leaves have as much as 10X the vitamins and minerals of their favorite garden/cultivated greens. They may also be amazed to find out that Dandelion flowers are also very nutritious and tasty in salads, make beautiful edible garnishes for soups and deserts, and also work well as a food dye. Dandelion root can be ground up and used as a coffee substitute, or as a tea....and can treat a wide variety of ailments including diabetes, arthritis, heart disease....and helps cleanse the blood of free radicals. This shunned little powerhouse is just ONE example of how modern society has turned it's back on common sense and well being, and exchanged it for carpet like lawns,( and microwave dinners with little or sometimes even NO nutritional value). Dandelions can be found growing almost anywhere. And picking the seeds yourself is an easy prospect. However, many of the areas where you can find them growing wild (even your lawn) may not be the cleanest environments, particularly if you have a close neighbor who demands his "weed" free chain link fence line and doesn't care to give the neighborhood cancer with Roundup in order to get it!! These dandelion seeds have been harvested from plants that have grown where there have been no chemicals sprayed anywhere close by for at least the last few years. Of course, in this magnificent world of chemicals, it's impossible to get away from them completely. But I do about as good a job as a person can do of keeping our plants clean and pathogen free. Dandelions like neutral to slightly alkaline soil, and will thrive in full sun or shade. Salad greens are milder of plants that are grown in shady areas, but take care to make sure the soil is well draining and that there is good air circulation as they are prone to downy mildew and shaded areas that are damp will make them susceptible. Harvest young leaves for salad greens, from plants that are 1-3 years old, in early spring; Harvest roots of older plants that are at least 3 yrs old, (or that have large rosettes) in fall. Pick flowers for drying, or fresh use at any time during the plant's lifetime. Dandelion sprouts also make good micro greens. If growing dandelions for only salad greens, pick flower buds off when they form so the plant uses all of it's energy for foliage production. And feed with fresh compost dressing every 2-3 weeks. Mulching with grass clippings will keep the plants with a constant source of nitrogen. Dandelion plants are perennials and will live for many years. They have a single taproot which gets quite long so you'll have to use a spade to get it out of the ground, and almost always you will end up leaving some of it behind!
